By default, Notepad ++ will open/create your document in ANSI Encoding; so if you would like to change its default setting to UTF-8, follow simple steps below:

1. Go to Settings => Preferences

2. In the Preferences popup, go to New Document/Default Directory => select UTF-8 in the Encoding panel.
